Ingredients:
- 2 cups white or jasmine rice
- 2 cups coconut milk
- 2 cups water
- 1 teaspoon kosher salt
- 1 teaspoon white vinegar
- 2-3 teaspoons sugar
- 1 tablespoon butter
- 2 cups diced mango
- ¼ cup chopped parsley or cilantro
- ½ cup sliced green onions
- ¼ teaspoon black pepper
Directions:
- Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil. Turn heat to low and cook covered 20 minutes or until most of the liquid is absorbed. Allow to stand 5 minutes.
- Add butter, mango, parsley or cilantro, green onions, black pepper, and additional salt, to taste.
