Ingredients
- 3 boneless skinless chicken breasts (2-ish lbs.) cut into strips
- 1 large yellow onion, sliced
- 1 red and 1 yellow pepper, sliced
- 3-4 Tbsp. olive oil
- 2 ¾ Tbsp. seasonings if made in bulk OR
- 2 tsp kosher salt
- ½ tsp pepper
- 1 tsp smoked paprika
- 1 ½ tsp chili powder
- 1 ½ tsp cumin
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1-2 tsp lime juice
- hand cull of cilantro, chopped
- flour tortillas
Instructions
- Combine the seasonings. Mix chicken, peppers, onions, seasoning and olive oil in a bowl to marinate (a few hours if you have time but not necessary.)
- Spread chicken mixture evenly on a sheet pan.
- Bake for 20 minutes at 425 degrees
- Top with cilantro and lime juice
- Serve with: sour cream, guacamole, salsa, rice, beans, cheese and lettuce
